this is so good. loosely adapted from a recipe from nigella lawson`s show "nigella`s bites" i saw on youtube years ago. i make it in one frying pan to save on dishes. first, boil water with a generous amount of coarse salt, break your pasta in half and cook with a splash of olive oil until al dente. while it`s cooking, separate one egg and use only the yolk. add a splash of lemon juice, parmesan cheese, pepper and salt to the egg yolk and beat with a whisk until fluffy, carefully adding in a splash of milk or cream. drain the pasta but don`t rinse; while at its hottest put back in the frypan and remove from heat. wait a second, then carefully pour on your egg mixture. do not agitate, you want it to thicken but not scramble. stir gently so that all the pasta is coated then plate & season liberally with pepper and parmesan cheese. place a few slices of prosciutto or (nama hamu as we call it in japan) on top. enjoy!
ingredients: lemon juice, grated parmesan, black pepper, coarse salt, olive oil, milk/cream, dried pasta, egg yolk.
